Ingredients
Steps
- Fresh tomatoes: cut a small X in the bottom of each, drop into boiling water for 1 minute, then into cold water. Slip off the skins, cut out the cores and roughly chop. Canned: crush them with your hands and keep the juice.
- Chop the roasted peppers into small pieces.
- In a wide pot over medium-low heat, warm the olive oil with the garlic (and the hot pepper, if using) until fragrant and just turning golden, 2 to 3 minutes. Don't let it brown.
- Add the tomatoes, peppers, paprika, sugar and salt. Stir and bring to a gentle simmer.
- Turn the heat to low and simmer uncovered for 1 to 1 1/2 hours, stirring every 10 minutes or so and more often toward the end, until the liquid has cooked off and it is thick, jammy and glossy with oil. A spoon dragged across the bottom should leave a clear trail.
- Taste and adjust: more salt, a pinch more sugar if the tomatoes were sharp, or a little more paprika.
- Cool to room temperature and spoon into a jar. Serve at room temperature with challah, pita or crackers.
TipKeeps a week in the fridge in a sealed jar with a thin layer of olive oil on top, and it tastes even better after a day. It freezes well too.
